The two cookbooks, Chef's Science and Anna Bornemisza's Cookbook, written during this period, demonstrate the existence of a developed princely culinary arts. The menus served at various events are among the most sophisticated and the staff that served these dishes were part of the nobility. Excessive use of oriental meat and spices was a specific feature of these menus. In the recipes appearing in these books, no quantity is specified for the ingredients that are used.
